Brown Sugar Pineapple Chicken

My slow cooker and I are besties. It’s a great solution for mealtime throughout the year and allows me to prepare dinner ahead of time so that during the close of my day I’m not feeling rushed to prepare a meal. I use my slow cooker several times throughout the week and one of my favorite, tried and true, no-one-complains-about-dinner recipes is my Slow Cooker Brown Sugar Pineapple Chicken which features Kikkoman® Less Sodium Soy Sauce, Dole® Pineapple, and rich brown sugar that cooks low and slow all day before being served over a bed of Minute® Brown Rice.

To start, I take some skinless chicken breasts and add them to my slow cooker. One of the best parts about this recipe is that you can use fresh or frozen chicken!

Then I cover the chicken with about half a cup of Kikkoman and half a cup of water.

And then some brown sugar.

And then I add a whole can of Dole Pineapple.

I cover and cook it for six hours on low.

About 20 minutes before it’s ready, I make some Minute Rice.

While the rice is cooking through, I remove the chicken from the slow cooker and chop it up.

Once the rice is ready, dinner is easy to serve. I love to make this Brown Sugar Pineapple Chicken with broccoli and create a rice bowl with the veggies, chicken, and soy sauce over top.

Using quality ingredients found at my local Walmart is what makes this recipe special. Kikkoman® Less Sodium Soy Sauce allows me to cut down on sodium levels without sacrificing big flavor in my meals. Dole® Pineapple Chunks in 100% Pineapple Juice give the chicken an added sweet and tangy flavor that’s naturally low in sodium. And the Minute® Brown Rice is a cinch to make and offers a rich nutty flavor to compliment the tangy flavor of the pineapple and savory flavor of the soy sauce.

Slow Cooker Brown Sugar Pineapple Chicken

Ingredients

  • two to three boneless, skinless chicken breasts
  • half a cup of Kikkoman® Low Sodium Soy Sauce
  • half a cup of water
  • one can Dole® Pineapple Chunks in 100% Pineapple Juice
  • one cup Minute® Brown Rice

Instructions

  1. In a slow cooker add chicken, soy sauce, water, and pineapple.
  2. Cook on low for six hours.
  3. Pull out chicken and cut up or shred and place back into slow cooker.
  4. While chicken is soaking up leftover juices in slow cooker, prepare one cup Minute rice as per directions on box.
  5. Serve in bowls layering chicken over rice.
