School week mornings are a little bit crazy in my house. Waking up drowsy kiddos, getting them dressed, hair brushing, breakfast making, lunch prepping…sound familiar? It just gets so busy and sometimes overwhelming enough that I forget to feed myself. I started making this Morning Fruit Salad at the beginning of my week and enjoy a little each morning before heading out for drop offs. It’s delicious and easy to put together. And paired with a night of restful sleep, helps me to tackle my crazy mornings.
To start, I peel and separate several mandarin oranges.

Next I half some red grapes.

And then I quarter a bunch of strawberries.

Slice up some bananas.

Dice up a few apples.

To finish it all with a little burst of tang, I halve a lime, squeeze the juice over the top of the fruit and gently fold it in.



This can be enjoyed right away, but I prefer to cover it and chill it overnight so all the flavors marry together.

- 3 mandarin oranges or Cuties, peeled and separated
- 14 grapes, halved
- 6 strawberries, quartered
- 3 apples, cored and diced
- 2 bananas, sliced
- 1 lime
- In a large bowl, combine mandarins, grapes, strawberries, apples, and bananas.
- Half the lime and squeeze the juice over the fruit.
- Gently fold it in.
- Serve immediately or cover and store in fridge.
