This year, I’m upping my snack game and swapping out less healthy options, for lighter and just as tasty options. Since I work from home, having snacks on hand or having easy to make snacks are essential. And since I (and my kiddos) have a sensitivity to dairy, I try to steer clear of most yogurts or milk products. As long time Silk almond milk drinkers, when I discovered Silk’s Dairy-Free Yogurt in my local Walmart, I did a little jig right there in the store. Really little jig. Like just a small shake because my kids get embarrassed over me. And because I didn’t want strangers to think I’d lost my mind a little bit…even though I momentarily did over this Silk yogurt. One of my favorite ways to enjoy yogurt is to dazzle it up a bit with some fillo shells and fresh fruit, so I knew that was exactly what I wanted to do with my Silk Dairy-Free Yogurt in strawberry flavor.
To start, I used already baked fillo shells. These are just so easy to work with. You just pop them out of the container and use them for whatever you’re heart desire’s. For the purposes of today’s recipe, I used them to create my Miniature Non-Dairy Strawberry Yogurt Tartelette treats.
Next, I scooped my Silk Dairy-Free Yogurt into a small zip closure bag, sealed it, and trimmed a small hole in one of the bottom corners.
Using the yogurt-filled bag, I piped the yogurt into each tartelette. It made things so much easier and mess-free this way.
And then I topped each tartelette with a fresh raspberry.
And then a bit of fresh mint for color.
These tartelettes are just gorgeous, aren’t they. They’d make such a great brunch addition or even just a snack on a warm afternoon. They’re so light, but filled with creamy flavor. Silk is dairy and lactose free, so if you’ve got a sensitivity like me, you don’t need to worry about a thang, girl! Just enjoy all that smooth plant-powered nutrition and flavor with six grams of soy protein per serving!
