While I may live in the Southern California High Desert, my soul has always belonged to the Michigan countryside. When college football season rolls around, my kiddos are dressed to the nines in green and white or yellow and blue gear. Up North it may be frowned upon to cheer for both teams, but here in SoCal, we love on both of our Michigan teams with pride. When one of our beloved teams is playing in the fall, we are cheering them on from our air conditioned desert homes.
One of my favorite treats to whip up for a game day are Cherry Dr Pepper Cupcakes. These babies are oh-so-moist and probably the easiest cupcake I’ve ever made in my life. Plus, with Dr Pepper being an official sponsor of the College Football Playoff and presenters of the National Championship Trophy, this is naturally where my theme-loving head goes! With just two ingredients and some store-bought frosting, I’m sharing my secret with you today.
To start, you’ll empty a box of chocolate cake mix into a bowl.
Next you’ll add a can of Dr Pepper.
It will fizz up quite a bit, but don’t worry. That’s supposed to happen.
Mix until the pop (that’s another thing we Michiganders are proud of) is completely incorporated into the cake mix.
You guys, that’s it. That’s all it takes. Transfer the cake mixture to some cupcake liners and bake them for 20 minutes at 350F degrees.
You’ll want to allow them to cool a bit before frosting them. But when you do, a store bought cherry frosting turns these into a perfect copy of a sweet Cherry Dr Pepper pop. Just transfer the frosting into a zip shut bag and snip off the tip to frost like a pro!
Top them off with a cherry before serving to add a little fun.
College football season in upon us, but no one enjoys those pesky college tuition or student loan bills, am I right? - one box chocolate cake mix
- one can Dr Pepper
- one can cherry frosting
- maraschino cherries
- In a large bowl, combine the cake mix with the Dr Pepper and mix until well incorporated.
- Transfer mix to a cupcake tin lined with cupcake liners.
- Bake at 350F degrees for 2 minutes.
- Once cupcakes cool, frost with cherry frosting.
- Top with cherry & enjoy!
