Zebra Bundt Cake with Pillsbury Purely Simple

One way I connect with my children is in the kitchen. Creating memories with them, even through a simple boxed recipe, is special and bonding. One of the first ways I connected with my stepdaughters was by whipping up boxed cake mix and transforming them into cake pops. That was four years ago and they still talk about our special afternoon in my tiny apartment kitchen.

While at Target doing my daily…er, weekly shopping, I found these new Pillsbury Purely Simple boxed cake mixes. These cake mixes contain no dyes, no preservatives, and no artificial flavors. Simple and pure, just like the name suggests! I picked up one of each of the white cake mix and chocolate cake mix (and the frosting!) because my brain instantly envisioned a zebra bundt cake with colorful sprinkles adorning the frosting.

To start, coat a bundt pan with copious amounts of non-stick spray. Really get in there and make sure every crevice has a coating.

Next you’ll combine the chocolate cake mix with one stick of butter.

Now add in a cup of milk and three eggs. Beat on medium speed for one minute and then medium-high for two minutes.

Set the chocolate mix aside and repeat the process separately with the white cake mix.

Next you’ll layer each mix in your bundt pan, a little at a time. There is no true method, the beauty is in the mess. Just add a layer of chocolate and a layer of white, back and forth until the bundt pan is 3/4 full.

Bake for 39-43 minutes at 350 degrees or until it passes the good ol’ toothpick test. While it bakes, a nice batter lickin’ session is in order.

TIP: If you have leftover mix, toss it in your waffle iron and freeze the cake waffles for a future breakfast. You could also make cupcakes and take them to a neighbor.

Allow your cake to cool for 10-15 minutes before removing it from the pan. If you used plenty of non-stick spray, it should pop right out without issue. If it’s stuck, this tip from The Ktchn is my go-to trick for getting it out without ruining the cake.

While the cake finished cooling out of the pan, whip up the Pillsbury Purely Simple frosting mix (also contains no dyes, no preservatives, and no artificial flavors!) according the the instructions on the bag.

My favorite way to frost a bundt cake is by warming up the frosting a wee bit in the microwave. Allow it to cool slightly before pouring it over the cake. Pour one light layer over it at a time, allowing each layer to slightly harden before adding the next.

Bundt cakes never get the attention they deserve. They’re beautiful and easier than they seem. Plus they’re great to slice up and stick in school lunches for a surprise treat, which is exactly what I’m planning to do with this one. Who needs a special occasion for a cake? Not this gal!
