Earlier this year, my friend Billynda introduced me to the concept of freezer meals. We spent an evening together early this spring prepping and bagging several freezer meals to feed our families for a month. While an entire day of freezer meal prep may not be your thing, I’m sharing a simple recipe today for your freezer that you can whip up in no time and enjoy when you’re in a pinch for something to make.
At Sam’s Club, they now sell six packs of Swanson’s Chicken Broth, which is the ultimate ingredient to have on hand when you’re prepping freezer meals. It’s packed with flavor, freezes well, and helps simmer slow cooker meals into perfection. Since I cook with chicken stock daily, I helped myself to a pack knowing I’d be using some to make a sausage lentil soup for the freezer along with my normal daily cooking.
To start, you’ll want a large zip closure freezer bag. Label the bag with the name of the meal, the date it was prepared, and the cooking instructions.
Add one package of lentils (they don’t need to be cooked – told you this was simple!).
Now add in carrots, some thyme, and one small sliced onion.
Next add in a couple cloves of minced garlic, some, salt, and some pepper.
Add in one pound of sliced smoked sausage.
Next you’ll seal it, removing as much air as you can from the bag.
Stick it in your freezer and pull it out whenever you’re in a pinch for dinner. It’s great to make tons of freezer meals at once, but you can easily build your freezer meal stock by making one or two meals at a time like this one.
Add the contents of the freezer bag to a slow cooker and add eight cups of Swanson Chicken Broth. Cook on high for 4-5 hours on high or 8-9 hours on low. This soup is divine served with brown rice or fresh baked bread.
