Easy No-Bake Protein Bites, a Back to School Snack for Kids

With back-to-school on the horizon, I’m preparing for two little boys to begin Kinder with a little bit of excitement and a little bit of wistfulness. It’s been an activity-filled summer for us, and while I’m eager for the boys to begin this new chapter in their lives, the mama bear side of me wants to keep them under my wings forever. During preschool last year, both boys often requested that I make their lunch. Isn’t it funny how something like that makes them feel loved and special?

This year, I’m getting more creative with what I pack and one item I know will end up in their lunch pails frequently are my highly requested easy no-bake energy bites. These little balls of peanut butter, oats, coconut and honey pack loads of protein to keep their bellies full until they come home. By adding some colorful candy to the mixture, these tasty no-bake protein bites become a little extra fun, and the kids actually feel like they’re getting a treat rather than a healthy snack. In fact, my kids call them cookies because they’re so yummy – it’s like having dessert!

Let’s whip up a batch together, shall we?

To start, add some peanut butter, honey and vanilla to a mixing bowl and mix until they are completely blended into each other.

Next you’ll add some oats, shredded coconut, ground flaxseed, and some colored candies. Mix until everything is thoroughly combined.

Transfer the mixture to the fridge for about 10 minutes until it’s firm enough to shape and then mold into one to 2 inch-sized balls.
