Kid Friendly Snack Bar, a Fun Twist on Lunch

We’ve all been there: the dreaded peanut butter jelly sandwich repeats, a culinary Groundhog Day that we often find ourselves in during the long summer months. This week, I battled those PB&J blues with a snack bar luncheon my kids thoroughly enjoyed. Plus it was just as easy as whipping up a sandwich and offered a variety of choices for my kiddos, all of whom have different preferences.

Rather than another pre-planned lunch, I instead opted to breathe new life into lunch with a kid-friendly snack bar filled with our favorites: granola bars, chips, cheese, watermelon, a salad, and even Pepsi for me (an occasional treat). Already excited, my kids became positively besides themselves when they saw me setting up a special area just for this luncheon.

The watermelon was one of the best we’ve had all year. My grandma told me that the trick to the best watermelon is to let it sit on your counter for a couple of days before you cut into it. It’s worked for me every single time. And you guys all know how my kids feel about watermelon by now, right?

The HUGE Anniversary sale at my local Vons (and Albertsons/banner stores) was the perfect way to stock up and pick up our favorite Pepsi and PepsiCo brands. Our local Vons is one of my favorite places to shop; especially when I can manage to get in a shopping trip without one of the kids tagging along. There is a Starbucks nestled just inside the entrance where I can pick up my favorite drink: a plain black iced tea. They offer a variety of organic options and even have an entire aisle dedicated just to local food companies that carries honey spices, and more from artisans to help boost the local economy. My family’s classic PepsiCo favorites are always there at an affordable price, our kids love being treated to Doritos, or as Collin calls them, “Burritos.”
