Last week, my husband and I hosted a fight night at our house and I made this Vanilla Coke Chocolate Cake, but used cold butter to grease my pan. When trying to transfer my perfectly baked cake onto a cake stand, I failed miserably and just whipped up a chocolate fudge frosting for the top of it to make up for my culinary fail. With NCAA® March Madness upon us, I wanted to recreate this cake and share the recipe since it was such a hit with the husband and his friends. Only this, time, I remembered to use room temperature shortening and flour inside my pan before baking. Take that, tricky bundt pan!
This decadent cake is made with Vanilla Coke to give it a rich and incredibly moist texture. Coca-Cola NCAA® Final Four Packs are available at Walmart in four flavors (Coca-Cola, Cherry Coke, Vanilla Coke and Coke Zero) that are perfect for recipes similar to this (only calling for one or two cans) with enough leftover to share with your guests. The in-store display was on the end of the pop aisle and easy to see so you can grab your favorite flavor or even try a new one since they come in packs of four.
To make this cake, you’ll start with some butter, oil, and a nice sized serving of Vanilla Coke. Heat it up on the oven until it’s brought to a good boil.
Next you’ll add your sugar and flour and stir it all up until it nicely combined and remove it from the heat.
Then add in some cocoa powder, eggs, and baking soda and pop it in the oven for about 30 minutes or until it passes the good ol’ toothpick test.
Allow it to cool completely before removing the cake from the pan.
Next make your frosting with some powdered sugar, butter and more of that fizzy Vanilla Coke.
You’ll also add in some more cocoa powder, vanilla, and some chocolate syrup. This cake is all about that decadent chocolate taste.
Pour that mouth watering frosting all over your cake and dust it with some powdered sugar, walnuts, almonds, or even chocolate chips.
- CAKE
- ½ cup butter
- ½ cup vegetable oil
- 1 cup Vanilla Coke
- 2 cups sugar
- 2 cups flour
- 2 eggs
- ¾ cup unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ cup buttermilk (or ½ cup milk and 1 teaspoon lemon juice)
- 2 teaspoons vanilla
- FROSTING
- 3 cups powdered sugar
- ½ cup butter
- ¼ cup Vanilla Coke
- ½ cup unsweetened cocoa powder
- ¼ cup chocolate syrup
- 1 teaspoon vanilla
- FOR CAKE
- Grease and flour cake pan and preheat oven to 350 degrees.
- In a saucepan, bring to a boil butter, oil, and Vanilla Coke.
- In a separate bowl, combine flour and sugar and then add to pan.
- Beat all ingredients together and remove from heat.
- Add eggs, cocoa powder, baking soda, buttermilk, and vanilla and mix well.
- Pour cake mixture into the prepared pan and bake for 30 minutes or until a toothpick comes out clean.
- Allow to cool before removing from pan.
- FOR FROSTING
- Cream together butter and sugar in a large mixing bowl.
- Add Vanilla Coke, chocolate syrup, and vanilla.
- Beat in powdered sugar ½ cup at a time, scraping sides of bowl frequently.
- For thinner frosting, add more Vanilla Coke.
