SeaWorld has become a summer tradition for our family. We have gone every year since moving out here to Southern California four years ago. My kiddos love seeing the sea life up close and I love that it sparks a love for learning more about the animals in the ocean, how they live, and how we as humans can help them to thrive in the wild. Every single time we’ve visited SeaWorld San Diego my kids leave having learned something new. And so do I!

Despite all of us needing to use the restroom, as soon as we entered the gates, the kids made a beeline for the cleaner fish. They look forward to these little guys every year. And my husband, with his callouses work hands, always attracts the most fish, which makes the kids scream and giggle.

We were blessed that my sister, niece, and nephew were able to tag along with us this year thanks to the Veterans program. Anyone who has served in the US military can get a ticket for themselves and three guests to enjoy the park. There was so much cousin love and playing that filled my heart. Here is a gaggle of cousins watching dolphins swim by.

The older kids got to jump on a ride while Aunt Cort and I hung back with the little ones and explored the tide pool exhibit.

Collin, whose favorite show ever is Catching Monsters, made a beeline for a freshwater aquarium exhibit and I was surprised to hear him spouting off names of each of the fish. “Mom! That’s an alligator gar! Do you think any bull sharks are in here? Sometimes they go into freshwaters!”

The older kids and dad on their water ride. They came off totally soaked.

We strolled by a turtle exhibit and one of the turtles made her way right out of the water towards our squealing kiddos. We all felt personally bonded to this particular turtle, of course, ha!

Next we fed the bat rays, which is always the coolest! Evelyn, my youngest, is never afraid of getting right up close with any animal and she loves feeding these guys every time we visit.

The crowing jewel of the trip was when I won wife and stepmom of the year. Jacob, MJ, and Andie got to participate in the Dolphin Interaction Program and actually get in and swim with the dolphins. We’ve been home for three days now and MJ is still clinging to her DIP towel she received after the swim.

Lunch is always here. Buffet style. Something for everyone. And beer too.

After we filled our bellies, we headed off to visit the beluga whales at the Wild Arctic exhibit.

And the three brave girls explored a polar bear cave. Collin was a little too scared.

We spent some more time exploring the park and learning more about animals. Penguins, flamingos, and otters. We also let each of the kids choose a souvenir. MJ chose a shark tooth necklace, Andie found a pretty starfish necklace, Evelyn chose a mermaid doll, and Collin chose a shark tooth necklace too. This year was supposed to be just for the older girls and Evelyn, but on a fluke we ended up having Collin on board. Sweet Aiden was having surgery to remove something he stuck in his ear (!!!) and his mommy was taking care of him so he couldn’t come, but we did get him some special souvenirs. One of which was a shark tooth necklace similar to Collin’s that he refuses to take off, ha!

Then we went to go pet some sharks.

Our final stop was one more visit to the cleaner fish. I finally gathered enough courage to let one touch me. And that was plenty adventure for me.

We finished our evening at Aunt Cort’s house and rested our heads before heading off to Aquatica the next morning.

We knew that we needed to get there early if we wanted any shot at grabbing a couple chairs in the shade. And our mission was a success once we landed a few chairs right under a shady umbrella.

We grabbed lifejackets for the smaller kiddos and headed off right away to get wet! The Lazy River was a great family activity that we all could play in together. There is a small waterfall you can float under and Evelyn was pumped about it. I know it doesn’t look like it here, but she was loving it.

One of my favorite things about the Aquatica San Diego waterpark is that they have several small areas for different age groups. Evelyn played in the toddler area, which is only about a foot of water, and went down slides in this area without being disturbed or overrun by bigger kids. There were several lifeguards manning the area with measuring sticks to ensure no bigger kids spoiled the fun for the smaller, less agile children.

For the older kiddos, there was this massive water playground that had a few bigger slides, lots of water machines, and plenty of places to explore. Here is where my big kid prefers to pick his wedgie.

Poor little Evelyn couldn’t hang. She slowly fell asleep after being wrapped up in her mermaid towel.

Both parks were such great places for our family to learn and explore together. We have memories from each and every time we visit that will last a lifetime. Growing up, my family had vacation traditions that I still look back on with fondess today. It makes me happy to know that SeaWorld San Diego and Aquatica will be a place for my kiddos to do the same.

How to Increase Daily Productivity Using a Paper Planner

Being a work from home mom, I have a hard time with being able to increase daily productivity. There are meals to prepare, kiddos who need attention, and a house full of projects that need tending to. It’s part of why my planner and I have a relationship together. I’m easily distracted by my surroundings, so my planner tethers me to what needs my attention now and what I can accomplish later. It reels me in when I’m distracted by putting a bandage on a boo-boo and come back to my desk wondering where I left off. Over time, I’ve developed a system that works for me and helps me to increase daily productivity by using a paper planner. One of my favorite planner systems is the Day Designer’s A5 Luxe Collection because of it’s versatility to fit all of my family’s scheduling and organization needs.

Making lists

Making lists is one of my most commonly used ways to attack my day. Physically handwriting lists somehow triggers my brain and helps me get into gear. There is also something weirdly satisfying about crossing off items as I get them done.

Setting goals

To achieve goals, you should probably think first about setting some, right? Common sense that’s often not all that common. I’m kind of a goal freak, or as I prefer, goal digger. Each year I sit down and think about personal, family, and work goals that I’d like to see achieved that year. And then I break those down into monthly goals. Each month I revisit my goals and adjust, set additional goals, and reevaluate where I’m at as far as progress. And then each week, I set small goals. Like I said. Goal digger.

Mapping out my week

For me, sitting down on a Friday night is when I start to map out my upcoming week. I set my goals, start my lists, and map out my time and where it will be spent each day. Appointments, meetings, events, and everything all gets laid out so that I can have a quick snapshot of my week ahead.

Once my week is mapped out and I can see everything that needs to be done, I can then start to figure out how to best manage my time. Block scheduling and setting works hours are essential to helping me work towards achieving the goals I set out for myself.

These methods have dramatically increased my functionality and productivity throughout the day as I apply them to my life and my work from home business as a lifestyle blogger. And I believe they can work for anyone who needs to reorganize and find a method to help them achieve their personal, family, and professional goals.

It also doesn’t hurt when you’ve got a paper planner that looks pretty, either. The new Day Designer A5 Luxe Collection Binders are giving me all the heart eyes. Easy Dump Meal | Albóndiga (Meatball) Subs

With five kiddos at home, weeknight meals need to be simple and easy to make; especially when back to school schedules pick back up. For me, I keep some sanity during those dinner time hours by keeping freezer meals and a ingredients for an easy dump meal or two in the pantry. A dump meal is a meal that uses just a few quick ingredients all dumped into a slow cooker in the morning so that the meal is ready when everyone is ready to eat dinner. Before school starts, I like to stock up on ingredients for dump meals like Prego Italian Sauce for Albóndiga (Meatball) Subs that I serve on hoagie rolls with a pile of mozzarella on top.

To start, add a bag of albóndigas (meatballs) to a slow cooker.

Cover them with a jar of Prego Italian Sauce in whichever flavor you prefer. I love good ol’ traditional, but all of them are homemade tasting and have that perfect blend of sweet and savory Italian flavor.

Dump it and forget it until it’s time for dinner. Do you see why I love dump meals like this one so much? All it takes afterwards is scooping some of the meatballs and sauce onto a roll, topping it with some mozzarella, and enjoying a piping hot homemade tasting meal with little effort.

Ingredients
  • one bag frozen meatballs

  1. Add meatballs to slow cooker.
  2. Pour jar of Prego Italian Sauce over the top.
  3. Cover and cook on low for 6 hours or high for 4 hours.
  4. Serve over hoagie rolls and top with mozzarella cheese

Blessings Bags, Why I Make Them

Community is important to me. I’ve always felt a responsibility to those around me and try to step up and take action using the God given gifts I’ve been blessed with to bless others around me. One of those gifts is hospitality and I use it to host a weekly community group with our church members and on holidays, I reach out with an invitation to anyone who has no one else to celebrate with, to come and celebrate with my family. During the summer, my children and I band together to create Blessings Bags, which are gallon zip closure bags filled with necessities someone who is homeless may have extra need for. It’s our small way of blessing someone in our community who may have been overlooked or misplaced.

Inspired by Jewelers Mutual Insurance Company’s Band Together campaign, we gathered supplies for our yearly summer tradition to create these Blessings Bags. One for a female and one for a male, filled with a variety of necessities, toiletries, and some creature comforts:

  • mouthwash
  • mints
  • a toothbrush
  • a small first aid kit
  • wet wipes
  • granola bars
  • sunscreen (extra important during the summer months here in the High Desert)
  • lotion
  • lollipops
  • cotton swabs
  • deodorant
  • tampons/pads (for the female bag)
  • dry shampoo

We filled the bags with all of the items and used a marker to identify if the bag had female or male contents inside. We’ll keep the bags in the car until we see someone in need and then we’ll gladly hand one out to them in hopes the contents will bless them in some small way. Our bags may not make a huge impact, but I believe our small gesture helps to uplift our community and at least touches the recipients, if nothing else. These Blessings Bags have also been a teaching tool for my children, who help me choose items and pack them, to give them mindfulness with compassion and share some community responsibility together.

Jeweler Mutual is also passionate about community and with their Band Together campaign are set to donate a total of $2 million to three important causes: health, home, and hunger. Based on our votes, they’ll divide the funds between the three nonprofits: St Jude Children’s Research Hospital, Habitat for Humanity, and Food Banks Canada & Feeding America. Butterfinger Smores Cookies

I love to be in the kitchen. Feeding and creating meals for others is my love language. When we have our weekly community group meetings in our home, I love to create new things to serve as a treat for our friends. When someone is sick, food is the first thing I use to try to soothe any worries. When I discovered the new baking mixes from Toll House during a recent shopping trip to Walmart, I grabbed up all four. They’re versatile and a great way to experiment in the kitchen, as I love to do.

The moment I laid eyes on Cookies & More with Butterfingers, I had instant plans for it. Smores is probably my favorite dessert and my husband can’t resist anything peanut butter flavored, so I combined our two loves to create these Butterfinger Smores Cookies filled with Butterfinger pieces, melty chocolate, gooey marshmallows, and crunch graham crackers.

To start, I lined a baking pan with graham crackers and set them aside.

I prepared my Toll House Cookies & More with Butterfingers mix as per the directions on the box by whipping together one egg, some water, and a stick of butter.

Then I slowly added the dry ingredients from the bag.

And then the Butterfingers.

Once it was well combined, I scooped the batter over the graham crackers.

And pressed it all into the pan until the crackers were completely covered and baked it according to the instructions on the box.

Once the cookies were finished, I topped them with miniature marshmallows and put them back the the oven to broil for just a minute or so. This part needs a little babysitting to ensure the marshmallows don’t burn.

Finally, I topped them with chocolate chips while the marshmallows were still hot so that they helped the chocolate get nice and melty.

Once it was all cooled, I sliced them up and dished them out to my kids who had been asking for them since they saw me unpack the new Nestlé Toll House baking mixes after I got my Walmart run last week.

These new baking mixes from Toll House are so versatile. If you share a love of baking and making food for others like I do, you’ll love the varieties they offer like Brownies and More with Butterfingers, Brownies and More with chocolate morsels, Cookies and More with Butterfingers, and Cookies and More with chocolate morsels. They contain no artificial colors or flavors, just pure baking goodness to create and experiment with.

Butterfinger Smores Cookies
Ingredients
  • one box Nestlé Toll House Cookies and More with Butterfingers mix
  • one egg
  • one tablespoon water
  • one stick butter, softened
  • six graham crackers
  • two cups marshmallows
  • half cup chocolate chips

Instructions
  1. Preheat oven to 350F degrees.
  2. Line a rectangle baking pan with graham crackers and set aside.
  3. In mixer, beat together egg, water, and butter until creamed.
  4. Slowly add dry baking mix from Toll House.
  5. Once dough is formed, add in Butterfingers and combine.
  6. Spoon dough over crackers and press down evenly over crackers with hands.
  7. Bake for 10-15 minutes until dough is browned on the edges.
  8. Immediately cover with marshmallows.
  9. Place back in oven on broil setting.
  10. Watch until marshmallows start to brown (only takes a minutes or less than).
  11. Remove from oven and immediately add chocolate chips over the top.
  12. Allow to cool before cutting into bars and serving.

Toilet Cabinet Organization

Many of us have that above the toilet cabinet that we stash things away in. Extra toilet paper, hair pomades and sprays, extra toiletries. Usually there is no rhyme or reason, it’s just there. Filled with whatever we shove inside it. With kids home for the summer, our toilet cabinet has taken a little extra wear and tear. It was getting a little out of hand so I decided to give it a small overhaul and put all those random items into some kind of order with a little toilet cabinet organization.

To keep small hands away from consuming all of the toilet paper, I stashed the extra rolls on the top shelf. You guys, how do kids go through so much toilet paper? Do they eat it? I mean…where does it go? My kids go through almost an entire roll daily. Daily. I’ve been using Quilted Northern® because their Mega Rolls have 4x more sheets and can last us an extra day or two.

Next I gathered my guest hand towels, rolled them up spa-style (is that a thing?) and placed them inside a galvanized bucket with a small bottle of lotion.

As for the miscellaneous hair products, I corralled them all in a basket that’s easy to pull out and place back when I’m done.

On the bottom shelf I also added a small drawer organizer and used one drawer for feminine products and another to store extra soap.

I was able to purchase everything for this mini makeover at my local Target. Haaaayyyyy dollar spot! With back to school season here, all of this organization and dorm stuff is easy to find. Just these few small updates created mega impact and helped to declutter the mish mash of items that found their way to my toilet cabinet.

Frozen Hot Chocolate Cheesecake

Summer is in full swing here at Casa de Sosa. Plenty of cold pasta, Crockpot dinners, and anything else we can do to keep the desert sun from keeping our home too warm inside. I’ve been pinning away recipes for weeks now looking for the perfect frozen dessert to make for our church’s weekly community group. And I have found true frozen dessert peace with this Frozen Hot Chocolate Cheesecake. Only, I was so excited I made it a week early…and we kind of ate it all before I could serve it to our community group. No REGERTS guys.

The hardest part about this recipe is letting it freeze. It will need to freeze overnight or at the very least, for eight hours. Resist the temptation, friends! Trust me and wait because this pie is glorious and worth every minute of torturous waiting.

Pull it out about ten minutes before serving and garnish however you like. With whipped cream, more crushed OREO cookies, or both, ha! Since this is a frozen pie, remember that it’s supposed to have an ice cream texture and any leftovers should be popped back into the freezer. But you’re not going to have any leftovers because THIS PIE!!!

Frozen Hot Chocolate Cheesecake
Ingredients
  • 2 cups OREO cookies
  • ¼ cup sugar
  • 6 tablespoons butter (melted)
  • 1 package cream cheese, 8 oz (softened)
  • 1 can sweetened condensed milk, 14 oz
  • 6 packets hot chocolate mix (with marshmallows)
  • 1 container cool whip, 8 oz (thawed)
  • ½ cup marshmallow fluff

Instructions
  1. Using a food processor, pulse the OREO cookies until they form fine crumbs.
  2. Transfer crumbs to a medium bowl and add sugar and butter and combine well.
  3. Press crumbs into bottom of a springform pan to form crust and set aside.
  4. In another medium bowl add cream cheese and beat for approximately one minute.
  5. Slowly add in condensed milk and beat for an additional three minutes.
  6. Stop mixer and add in one packet hot chocolate mix.
  7. Turn mixer on and mix until well combined.
  8. Repeat process with each packet of hot chocolate mix.
  9. Fold in Cool Whip by hand until just combined.
  10. Gently swirl in marshmallow fluff to create ribbons throughout mixture.
  11. Transfer to springform pan with OREO crust and spread evenly throughout.
  12. Freeze overnight or eight hours.
  13. Remove from freezer 10 minutes prior to serving.
  14. Store leftovers back in freezer.

Aloe Play Dough

I love play dough recipes and experimenting with different textures, smells, and mediums to create a fun sensory activity with my kiddos. During the summer, we try a new rceipe nearly every week and this week, I wanted to try out creating Aloe Play Dough using some aloe vera we had on hand. This two ingredient recipe was a hit and smelled so good! For me, aloe is cool to the touch and playing with the dough I could feel the coolness of it as I kneaded it through my hands. The kiddos loved it too and used forks to create imaginary recipes with their portion of the dough.

SUPPLIES

  • aloe vera (2 parts)
  • corn starch (3 parts)

With two ingredients, this recipe is pretty simple and self explanatory, but it can also be intimidating to get the consistency right. Start by pouring your aloe into a large bowl.

And then add in corn starch. For every two parts of aloe, you’ll add three parts of corn starch. So if you have two cups of aloe, you need three cups of corn starch.

The measurements are really give or take and in my case I needed even more corn starch. This is still too thin.

Just keep adding and stirring until your dough forms. Then go at it with your hands to mix everything together.

The dough is a pretty pastel green color and so much fun to move through your hands.

It has a slight cooling sensation and molds around almost exactly like store bought play dough. You can use cookie cutters and other kitchen tools with it to create whatever your imagination desires. My little girl loved playing with this.

Out of the Blue Care Package

My husband works rotating shifts at our local cement plant which often means we become passing ships in the night…or day…or afternoon. You get it. We’re passing ships. So when it’s been an especially long period of time between quality time together, I like to surprise him with a little gift, letter, or small care package in his work lunch box. Inspired by the new Extra® 35-stick packs in Spearmint and Polar Ice® I found at my local Walgreens, I went on a hunt for blue packaged snacks I could tuck away into husband’s lunch box for him to discover between breaks during his shift.

A quick jaunt down a few aisles at Walgreens and I located all sorts of blue packaged treats and even an energy drink for my hard working husband. Since I gathered more than I originally anticipated, I also grabbed a blue gift bag. You could also use a box or decorate a plain brown bag with blue stickers and paint.

Back at home, I used a chalk pen to write on the outside of the bag, “A little something out of the blue to show how much we love you!”

Once it was dry, I opened the bag and added all of the blue snacks inside, including thew new 35-stick pack of Extra Polar Ice gum.

I love the new durable, recycled packaging because it can handle the demands of my husband’s physical job without damaging the gum or getting soggy. It’s also a convenient way for him to split and offer a coworker some gum. And as an avid gum chewer, the additional gum in the packaging is an added bonus!

Small expressions of appreciation and love in the form of care packages are one of my favorite ways (and my husband doesn’t hate it, either!) to let my husband know how much he means to our family. Hopefully this easy idea inspires you to Give Extra, Get Extra too!
