Meatless Alfredo, Easy Weeknight Dinner

One of my kids favorite weeknight dinners is Meatless Alfredo. Probably because it’s basically glorified macaroni and cheese with some parsley on top, ha! Since we try to have meatless meals at least once weekly, I kept the meat out of this version of it. However, if you prefer to add a little protein, adding ground turkey or chicken breasts both work well in this dish.

To start, boil up some noodles. Preferably a variety that helps hold in cheese sauce like penne.

Next, chop up an onion super finely. I use a small hand blender to get it to an almost rice-like texture. In a medium saucepan, add some butter and the onion and simmer it together until the onion starts to cook through. Add in some garlic and cook it until fragrant.

Add a full quart of heavy cream to the onion mixture. And then add in roughly one to two tablespoons of chicken bouillon and whisk it all together. Let it come to a boil and continue to whisk for about two to three minutes until the sauce starts to thicken.

Once the pasta is done, drain it and transfer it to a large serving dish.

And then pour the cream sauce over it. Top it with some shredded parmesan and parsley and you’re done!

This Meatless Alfredo is simple to throw together on a busy weeknight and one of my go-to recipes when I know my husband won’t be home in the evenings to lend me a hand with the kiddos. It’s a meal I know I won’t get any turned up noses with, which means no dinner negotiations!

Meatless Alfredo
Ingredients
  • one pound pasta
  • one medium onion
  • two tablespoons butter
  • two cloves garlic, minced
  • one quart heavy cream
  • one – two tablespoons chicken bouillon
  • ½ cup shredded parmesan
  • two tablespoons parsley

Instructions
  1. Cook pasta according to box instructions.
  2. Dice onion finely and add to saucepan with butter.
  3. Cook onion until translucent and add garlic.
  4. Cook just until garlic becomes fragrant and add heavy cream.
  5. Allow to come to a boil while whisking and allow to cook until sauce thickens.
  6. Add chicken bouillon to taste.
  7. Drain pasta and transfer to dish.
  8. Cover pasta with sauce.
  9. Top with parmesan and parsley.
  10. Serve immediately.
