The Busy Mom’s Chicken Pot Pie

It’s been quite the summer this far for my big family. Having all five kiddos home fills my heart with joy, but it also fills my day up quicker than I can catch up. I am a diligent schedule keeper and that includes our meals, but even with all my preparation and planning ahead, there has been a couple nights where I’ve realized I don’t have dinner planned. A quick glance in the freezer and fridge as I tallied what we had on hand resulted in this easy, comforting, and simple chicken pot pie that I’ve lovingly named The Busy Mom’s Chicken Pot Pie.

Everything about this recipe is a quick and easy solution that results in that home cooked taste, but with little effort on your part. The biggest secret lies with the chicken itself: Tyson Grilled & Ready Chicken Breast Fillets. They’re already cooked, 98% fat free, and have no preservatives. All you have to do is warm them up and chop them into pieces for this easy chicken pot pie.

You also need veggies, sorry I’m not sorry kids, but veggies are happening. At every meal. So why do you still act surprised after all your years of life? These Birds Eye Steamfresh Protein Blends are already a regular favorite in my home and I had the California Style in the freezer, so I used it. Maybe not your typical chicken pot pie veggies, but it still works and it was super tasty in this dish.

Once you have your chicken warmed up and in bite sized pieces, and your veggies steamed, toss them together in a large bowl. You’ll also add in a can of cream of celery soup.

In a muffin tin, place one biscuit and mold it into a bowl. Scoop in some of the chicken mixture and tuck the edges of the dough around it. Repeat until you’ve used the entire mixture.

Cover each pie with another biscuit, flattened out a bit, to create a miniature pie.

Bake for around 20 minutes or until the biscuits have browned.

These chicken pot pies are perfectly kid-sized thanks to the muffin tin and my kiddos love these miniature dinner pies. You can find all the ingredients, including Tyson Grilled & Ready Chicken Breast Fillets and Birds Eye Protein Blends at your local Walmart.
