Summer usually means it’s potluck season, which is one of my favorite things. Potlucks are a fun way to try out new ideas and an ideal way to feed a crowd. For me, having a couple surefire recipes on hand that are easy to whip up, but also pack loads of flavor is the best way to prepare for the upcoming potluck season. Since I’m a lover of Mexican food, I love this easy recipe for Zesty Taco Salad. It travels well and stays fresh until you’re ready to serve when you add the final two ingredients. Bring it on, potluck goers!

To start, you’ll brown some extra lean ground beef in a pan. Cattleman’s Finest from Smart & Final always works well for me in this recipe.

Once the beef is completely browned, add in a packet of taco mix and combine until the meat is completely coated and no mix is left in the pan.

Set your beef aside to cool and chop up a whole head of lettuce.

Next chop up one whole tomato.

In a large dish or bowl, throw in the lettuce, tomato, beef (once it’s completely cooled), and add a nice helping of cheese. Toss everything together until it’s nicely combined.

If you’re going to eat now, add about a cup of Catalina dressing and crunch up some cheese flavored tortilla chips. Mix it all together and enjoy.

If you’re taking this to a potluck, simply cover the salad and bring the dressing and chips with you. Just before serving, you’ll add them to your bowl.
