Baked oatmeal is one of my favorite breakfasts and when I add chocolate, it becomes one of my kids’ faves too. Mornings are the busiest time of day for my family, which is why I love this simple to make, easy to freeze baked breakfasts; especially when pared with something savory like HOT POCKETS® Breakfast Bites. What can I say, I need my sweet and savory fix in the mornings!
To start, grab a mixing bowl and add in some quick cooking oats, rolled oats, brown sugar, baking powder, cinnamon, and salt.
Next add in some milk, butter, and beaten eggs.
And loads of chocolate chips. As little or as much as you’d like here, it’s all up to your family’s preference.
When it’s thoroughly mixed, the oats will be completely coated in liquid from the milk, eggs, and butter.
Transfer the oatmeal to a square baking dish and top with a few additional chocolate chips… just for good measure.
Bake it for roughly 35 minutes and enjoy it right from the oven.

- 1½ cups quick cooking oats
- 1½ cups rolled oats
- 1 cup brown sugar, packed
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 cup milk (almond or dairy)
- ½ cup butter, melted
- 2 eggs, beaten
- ¼-1/2 cup chocolate chips
- In a large mixing bowl, combine all ingredients until oats or thoroughly coated.
- Transfer mixture to a square baking dish.
- Bake at 350 degrees for 30-35 minutes.
