My kids love pepperoni, in fact, they practically worship it. Straight from the pouch, peeling it from their pizza, inside a pasta salad, wherever they can get to it, it’s a Sosa house favorite. That’s why when brainstorming a new family recipe featuring the zesty snack, I couldn’t whip one up fast enough. Knowing my kids love of pepperoni and carbs (rolls, breads) I dreamt up a savory Hormel Pepperoni Cornbread.
Few things go better with pepperoni than cheddar cheese, so I knew I wanted to include it in my recipe. Opening my pantry for inspiration, I found a box of cornbread mix. And then, just like that, this cornbread pizza muffin recipe was born. What a glorious day it was, if I do say so myself!
You probably already have everything you need for this right in your kitchen. Grab some eggs, milk, cornbread mix, cheese, and pepperoni.
To start add your cornbread mix to a large mixing bowl.
Add some eggs.
And some milk (we use almond around here).
Mix it all together until it’s just slightly lumpy.
Pour the cornbread mixture into lined muffin tins.
Top each muffin with a nice helping of cheddar cheese.
Chop up some of that savory Hormel Pepperoni.
Add your pepperoni all over the top of each muffin.
Bake it until the cheese is slightly crisp and the muffins are golden.
Try not to fall over yourself with excitement when you pull these babies out of the oven, because, man alive, do they smell delicious! My kiddos devoured these simple to make muffins and I’m positive the leftovers I send to my husband’s work will be thoroughly enjoyed. I was impressed with these muffins so much, that I may recreate them for Aiden’s ninja turtle party this May. How perfect are these mini pizza muffins for that?
- two boxes cornbread mix
- two eggs
- ⅔ cup of milk
- one cup cheddar cheese, shredded
- one cup Hormel Pepperoni, diced
- In a large mixing bowl, combine cornbread mix, eggs, and milk until slightly lumpy.
- Transfer mixture to lined muffin pan, filling each tin ¾ of the way.
- Top each muffin with cheddar cheese until gone.
- Top each muffin with pepperoni until gone.
- Bake for 20 minutes at 400 degrees or until golden.
